Eric Lyons has been at the heart of Knowle since the 1800s — a family-run butchers built on generations of master craftsmanship. Every cut we sell is prepared to order by our skilled team, with steaks, joints and dry-aged meats finished to your exact specification. We don’t compromise on quality — our dry aging process enhances flavour and tenderness, creating the most succulent cuts you’ll ever try.

Beyond the counter, our in-house bakery produces handmade pies using freshly made pastry — puff, shortcrust and sweet, all crafted daily. Paired with our slow-cooked, top-quality fillings, these pies have earned a reputation as some of the best in the country.

We’re passionate about sustainability and waste reduction. Our Woolcool packaging keeps deliveries fresh while eliminating polystyrene, and nothing in our kitchen goes to waste — every offcut, bone or slightly greying mince is repurposed into something delicious.

We’re deeply rooted in our community, supporting local farms (some just two miles away), hosting school visits, and giving back whenever we can. And we’re proud to nurture new talent, with apprentices learning side by side with our Master Butchers.
